    Two Ingredient Chocolate Covered Cherries.

    If you’re a fan of cherries, you will love these super easy chocolate covered cherries! This simple recipe uses just two ingredients, but it’s the perfect combination of juicy cherries and rich, dark chocolate.

    At our house, we love fruit dipped in chocolate. It’s one of our favorite summertime desserts! Whether it’s chocolate covered strawberries, chocolate dipped frozen bananas, or some other delicious combination, we are big fans over here.

    Cherries are in season right now, and I’ve discovered that fresh cherries work very well for making chocolate covered cherries. I actually have always hated the kind of cherry cordials you can buy at the store – the syrupy centers are just too sticky and sweet for me.

    But the combination of cherries and chocolate is delicious, so I thought, why can’t I just make these candies with two ingredients? Just pitted fresh cherries, and rich chocolate?

    Turns out, you can definitely make chocolate covered cherries that way! And it’s really nice for food allergy families, because you’re in charge of what brand of chocolate to use. Pick your favorite allergy friendly chocolate and dip away!

    Ingredient Notes

    • Cherries – This recipe works best with fresh cherries. You can use either Bing cherries or Rainier cherries if you like.
    • Chocolate – I just used melted Enjoy Life dark chocolate chips for this recipe. They melt really well, it’s easy to dip things in them, and the chocolate firms up nicely again once it’s cooled. You can use any brand of allergy friendly chocolate that works for your specific dietary needs. You can get fancy if you like and temper the chocolate, but I feel like that is a very fussy step, and it just isn’t necessary for this recipe. To keep it simple, just melt the chocolate, dip the fruit, and chill in the refrigerator to get the chocolate to harden again.

    Step by Step Instructions

    1. Wash and pit the cherries. I am very careful about pitting them – I pay attention to what I’m doing and make sure I see the pit come out! No one wants to chomp down on a cherry pit.
    2. Melt the chocolate. You can use a microwave, or melt it on the stove top.
    3. Dip the cherries in the melted chocolate and set on a parchment paper lined baking sheet or plate.
    4. Refrigerate until the chocolate is firm – about 30-45 minutes.

    Special Equipment

    • You need a cherry pitter to remove the pits from the cherries.
    • If for some reason you wanted to temper the chocolate, then you would need a candy thermometer. But since this recipe is all about quick and easy, you don’t need to measure the temperature if you’re just melting the chocolate quickly in the microwave.

    Ingredients
     
     

    • 30 sweet cherries
    • 1 ½ cups chocolate chips I used dairy free chocolate chips
    Prevent your screen from going dark

    Instructions
     

    • Wash the cherries and remove the pits from the cherries using a cherry pitter. Set the cherries on a paper towel lined plate to dry.
    • Place the chocolate chips in a small sauce pan and heat over medium low heat, stirring occasionally until smooth and melted. (You can also use a microwave to melt the chocolate if you prefer).
    • Line a cookie sheet with waxed paper.
    • Place one cherry at a time in the melted chocolate and use a spoon to make sure it gets fully coated. Set the chocolate covered cherries on the prepared cookie sheet. You can use the spoon to drizzle a little more chocolate overy each cherry for a decoration if desired.
    • Place the finished cherries in the refrigerator for 30-45 minutes or until the chocolate is set.
    • Store the finished candies in the refrigerator. They should keep for 2-3 days.

    Notes

    Nutrition facts are for 3 chocolate covered cherries. This recipe makes 10 servings.
    You can use any kind of chocolate you like. For dairy free chocolate chips, try Enjoy Life or PASCHA Chocolate.
    If you want to make these a little fancier, you can drizzle white chocolate on top, or top these with sprinkles while the chocolate is still melty.
