    Quinoa Porridge with Mixed Berries.

    A hearty and tasty breakfast that’s quick to make, this quinoa porridge with mixed berries is a great way to start your day! This is an easy gluten free breakfast option that’s allergy friendly and so delicious.

    Do you change what you eat for breakfast during different seasons?

    I tend to crave different things depending on the weather. In the winter, I might eat a heavier breakfast – maybe sausage and potatoes, or baked oatmeal. The cold weather makes me want to start the day with something warm and cozy.

    But sometimes I still want a warm breakfast even in the summer. This quinoa porridge is an excellent breakfast for the warmer weather. It’s filling, but it’s not too heavy. When topped with seasonal fruit, it’s a delicious, gluten free way to start your day.

    This porridge is so easy to make – you simply cook quinoa with milk and add a little bit of sweetener. You can then top your breakfast bowl with seeds, coconut, chocolate, and fresh fruit.

    Ingredient Notes

    • Quinoa – Quinoa is a gluten free ancient grain that is technically a seed. Some people can’t tolerate quinoa, and you can read more about that here.
    • Non-Dairy Milk – Feel free to use any non-dairy milk that you like that works for your dietary needs. Oat milk, coconut milk, soy milk, or flax milk would all work well.
    • Fruit – Use any fruit that you like! I chose to use different berries, because that’s what was in season.
    • Maple Syrup – I like the flavor of maple syrup on my quinoa cereal, but you could also try honey or even brown sugar if you prefer.

    Toppings

    Top this bowl with any fruit that you like – berries, apples, peaches, pears, pineapple, or kiwi are all good choices. Toasted coconut flakes, seeds, or chocolate chips would also be delicious.

    If you can have nuts, feel free to add those as well. You could even add a swirl of sunbutter or nut butter if you like!

    Step by Step Instructions

    1. Cook the quinoa in a mixture of water and non-dairy milk.

    1. While the quinoa is cooking, cut up the berries.

    1. After the quinoa is done cooking, stir in more non-dairy milk, vanilla extract, and a pinch of salt.

    1. Put the quinoa porridge in bowls and top with berries, chocolate chips, maple syrup, and anything else you like!

    Storage

    You can store this in the refrigerator for 3-4 days. Just add a little more non-dairy milk when you reheat it.

    Ingredients
     
     

    • 1 cup quinoa rinsed and drained
    • 1 cup water
    • 1 ¾ cup non-dairy milk I used So Delicious unsweetened coconut milk
    • 1 teaspoon vanilla extract
    • pinch salt
    • 1 cup strawberries sliced
    • 1 cup blueberries
    • ¼ cup dairy free chocolate chips
    • 2 Tablespoons maple syrup or other sweetener of your choice
    • ½ cup pumpkin seeds optional
    • extra non-dairy milk if desired
    Prevent your screen from going dark

    Instructions
     

    • Place the quinoa, water, and 1 cup non-dairy milk in a medium sized pot and bring to a boil. Reduce heat and cover, cooking on low for about 20 minutes, or until the quinoa is light and fluffy.
    • Stir in the vanilla extract, pinch of salt, and ¾ cup non-dairy milk.
    • Spoon into bowls and top with berries, chocolate chips, and pumpkin seeds (if using). Drizzle maple syrup on top. Add more non-dairy milk if desired.

    Notes

    Store this porridge for up to 4 days in the refrigerator.
    Use any non-dairy milk that works for your dietary needs.

      Sounds good. I am allergic to oats, so this is great. Are the cacao nibs chocolate? I’m allergic to chocolate and would love to know of something to replace it with. Do you have an idea? Thanks.

        Yes, they are chocolate. Could you try a different seed for some crunch? Sunflower or pumpkin? Or maybe some toasted quinoa?

      I haven’t tried quinoa yet, but love how simple this is. Especially love that it isn’t super sweet. I have been moving more and more to savoury breakfasts but once in a while crave a little something sweet. I will remember this for those mornings

      We love anything with quinoa – sweet, savoury, baked, on it’s own, you name it! This looks so delicious! All it needs is a dollop of nut butter!
