These vegan apple cinnamon pancakes are the perfect weekend breakfast. I love to make vegan pancakes or waffles on the weekend and these apple cinnamon pancakes are so good!
I especially like to add a little more flavor to my pancakes in the fall. Whether it’s apple cinnamon, or pumpkin, or chocolate chips…these are all good additions in my book.
These vegan apple cinnamon pancakes are really easy to make, and they get pretty light and fluffy, which is wonderful, because sometimes egg free pancakes can be a little chewy, which is not my favorite quality in a pancake.

Vegan Apple Cinnamon Pancakes.
Ingredients
- 1 cup spelt flour
- 1 Tablespoon baking powder
- 1 ½ Tablespoons sugar
- ⅓ teaspoon cinnamon
- ¼ teaspoon salt
- 1 cup non-dairy milk
- 2 Tablespoons melted vegan buttery spread plus more for the pan
- ¼ cup unsweetened apple sauce
- ½ teaspoon vanilla extract
Instructions
- Put the dry ingredients in a bowl and whisk together with a fork.
- Add the wet ingredients, stir. Let everything sit for a few minutes until the batter starts to rise.
- Meanwhile, you should be heating your frying pan and about a tablespoon of buttery spread over medium heat. We have an electric stove and I put it at about 5. The secret to good pancakes, (not just these) is to get your pan nice and hot before you spoon the batter in.
- When the butter is melted and the pan is good and hot, spoon your batter in, and turn the heat down a tad, to medium low. Once the edges of the pancake look done, and you see a few little bubbles forming in the pancakes, flip them over. DON’T WANDER AWAY! I am a big multi-tasker, and I just cannot leave the pancake pan when cooking. They will burn. Believe me, I’ve done it many a time.
- Once done, remove from pan and add more buttery spread as needed for the next round.

I used unbleached all purpose flour, one small grated apple instead of apple sauce (still around 1/4 cup) vanilla, cinnamon and a small amount of ground chia and these turned out Very tender I am really happy with this recipe! My vegan pancakes are almost always dense and rubbery but these were a great texture.

Girl these were delicious. I tweaked a few things though. I added a little bit more flour, a tsp more applesauce and cinnamon. By far best pancakes I have ever had. Thank you this is great. I have been a vegan for a long time and this recipe has a lot of little changes you can make to it. For instance this would be an excellent crepe recipe. Lol hint hint….

I use this recipe a lot, thank you! It would really be helpful if the ingredients were listed in the order they are used. The dry ingredients come first, but they are scattered through the ingredient list. It just makes things a bit easier. It is easy to miss something when ingredients are out of order.

Made these this morning for my mom and me and they turned out AMAZING! Super moist, yummy, and very easy to prepare. Only changes I made were using less sugar and adding some crushed walnuts and flax seed meal. These satisfied our urge for some pancakes and they delivered, without the use of cruel, unhealthy animal products. Will definitely ne making these again :)

Awesome recipe and the pancakes are beautiful and fluffy! I will say though, I only managed to make 4 pancakes (15cm rounds) with this which barely feeds two people! Especially if you’re planning to feed boys I’d recommend at least doubling the recipe for ‘serves’!

I’m not sure what I did wrong, but when I tried to make these they stuck to the pan and turned to mush. Pan was nice and hot when I spooned in the batter? What a disappointment :(
