About a month ago we decided to take a last minute trip to Chicago. Last minute trips are not something that we normally do, but I had spotted a great deal on a hotel on the Magnificent Mile, and I was just really in the mood to go somewhere different for a few days.
After some discussion, and me hemming and hawing for a while, we decided to go for it. Since my son has food allergies, spur of the moment travel isn’t always easy. But after thinking it through, we decided that we would give it a try. Chicago is a big city, there are multiple Chipotle restaurants (our safe quick restaurant), and I knew that I would be bringing lots of safe food for my son.
In addition to buying safe food and snacks before we hit the road, I also did some baking. I made some allergy friendly treats as well as some breakfast options. I knew that the mornings would be the hardest to deal with – it’s not easy to get everyone out the door early and find a safe place to eat before everyone gets hangry.
We packed plenty of fruit, plus we had some fresh baked goods as well. We were able to eat a good breakfast in our hotel room before we headed out each day to visit the museums and aquarium.
These chocolate chip banana oatmeal breakfast bars are just perfect if you are traveling or staying home! They’re filling and not too sweet – a good breakfast or snack if you are in a hurry.
