    Cinnamon Sugar Oatmeal Crackers.

    These oatmeal crackers are a delicious gluten free, allergy friendly snack! They have a great flavor that’s lightly sweet and perfectly spiced with cinnamon. You will love the crisp crunch of these crackers whether you enjoy them plain or dip them into fruit salsa.

    You know, with all the cracker recipes I’ve made through the years…I had not made a sweet cracker yet.

    No graham crackers or anything like that, which is super weird, because we love graham crackers for a snack.

    Well, that’s all changed now, because I decided to try something new the other day when I made these cinnamon sugar oatmeal crackers. The first thing my son said when he bit into one was, “Yum, are these graham crackers?” They do have a graham cracker-like quality, although the texture is a slightly different.

    These are lightly sweetened, and spiced with cinnamon both in the dough and on top of the cracker. I made my own oat flour by grinding oats in the food processor. The oat flour gives these a nice crunch, and adds some extra fiber to these crackers, too.

    I cut these into triangle shapes for fun, but you can cut them into squares or rectangles if that’s easier! Don’t forget to sprinkle on the cinnamon sugar – that’s the perfect finishing touch!

    Ingredient Notes

    • Certified Gluten Free Oats – If you are gluten free, you need to use certified gluten free oats so that there isn’t any cross contamination from wheat. We like GF Harvest brand oats, but there are other brands to choose from, too.
    • Gluten Free Flour Blend – Namaste Perfect Flour Blend worked well for these crackers. I think other brands like Gluten free 123 would also work well.
    • Vegan Buttery Spread – I used Earth Balance Soy Free Vegan Buttery Spread, but you can use any brand that works for your dietary needs.
    • Sugar – Organic cane sugar is what I used in this recipe. I don’t recommend coconut sugar, as it may give the crackers a darker color and different flavor.
    • Maple Syrup – I like the flavor that maple syrup adds to these crackers, but you could use honey instead if that’s your preference.

    Substitutions

    • If you aren’t gluten free, you can go ahead and use all-purpose flour.
    • If you aren’t dairy free you can use regular butter.
    • If you’d rather not use vegan buttery spread, coconut oil should also work in this recipe.

    Step by Step Instructions

    1. Pulse the certified gluten free oats in a food processor until they become a coarse flour.

    1. Place the oat flour in a bowl along with the melted vegan buttery spread, gluten free flour, sugar, maple syrup, salt, cinnamon, and water.

    1. Stir well to combine. The dough will be thick.

    1. Place the dough between two sheets of parchment paper, and use a rolling pin to roll it out to a thickness of about ⅛ of an inch.

    1. Use a sharp knife to cut the crackers into triangles or squares, but don’t separate them. Sprinkle cinnamon sugar on top.

    1. Bake at 400 degrees F for about 16 minutes.

    1. Allow the crackers to cool before carefully breaking them apart.

    1. Enjoy them plain or with fruit salsa, nut or seed butter, or jam.

    Storage

    Store leftover crackers in an airtight container. They should stay fresh and crisp for about 3 days.

    Ingredients
     
     

    • ½ cup certified gluten free old-fashioned oats
    • ⅝ cup gluten free flour blend I used Namaste Perfect Flour Blend
    • ⅛ teaspoon salt
    • 1 ½ Tablespoons organic cane sugar
    • 1 teaspoon cinnamon
    • 1½ Tablespoons vegan buttery spread melted
    • 1 Tablespoon maple syrup
    • ⅛-1/4 cup water the amount may vary depending on the flour you use

    Instructions
     

    • Preheat the oven to 400 degrees F.
    • Put the gluten free old-fashioned oats in the food processor and process until a coarse flour forms.
    • Put the melted vegan buttery spread in a bowl, and add the maple syrup and sugar. Stir well.
    • Add the oat flour, gluten free flour blend, cinnamon, and salt. Stir.
    • Add the water a little at a time, alternating with stirring, until the dough comes together into a ball.
    • Place the ball of dough on parchment paper, and lay another piece of parchment on top.
    • Use a rolling pin to roll the dough out to a thickness of ⅛ of an inch. Remove the top piece of parchment and transfer the dough to a cookie sheet.
    • Score the dough into squares or triangles. Do not separate. Sprinkle water on top and smooth over the dough with your fingers. Dust the crackers with cinnamon sugar.
    • Bake at 400 degrees F for 13-16 minutes.
    • Let the crackers cool completely before breaking them apart.

    Notes

    Store leftover crackers in an airtight container. They should stay fresh for about 3 days.
    If you aren’t gluten free, you can go ahead and use all-purpose flour.

      Thanks for taking the time to experiment in the kitchen and sharing your successes. I am not a big fan of the vegan buttery spread…do you think I could replace it with coconut oil? Anybody else tried? Thanks in advance.
