I was in the mood to make granola this weekend, but realized that I didn’t have any dried berries or pecans, so I improvised with what I had on hand. A quick look through the pantry, and I decided that coconut cashew granola sounded too good to pass up!
I kept the recipe really simple because I just had a few minutes to mix it up during Baby Bee’s nap. Â You could add other ingredients if you wanted to: Â flax seed, sunflower seeds, etc.
Here’s my recipe:
Coconut Cashew Granola.
Ingredients
- ½ cup organic canola oil or coconut oil
- â…“ cup honey or maple syrup
- ½ teaspoon vanilla extract
- 3 cups gluten free oats
- ¾ cup unsweetened shredded coconut
- 1 cup cashew pieces
- pinch sea salt
Instructions

In a large bowl, combine oil, honey and vanilla and whisk together. Add oats, coconut and cashews and stir to coat. Add a bit of salt if desired.

Pour onto a rimmed cookie sheet lined with parchment paper and spread out evenly. Bake at 300 degrees for 35-45 minutes until golden brown. Stir about every ten minutes so that it bakes evenly.

Let cool, then store in an airtight container.
I’ve been eating this coconut cashew granola all weekend with plain almond milk…so good!

I’m excited to experiment with other flavors, and to see what we like the best. I’m also thinking about trying to make our own granola bars. I go through a lot of those, so if there was a way to make them and have them hold up well, I would be all for it!
