    Dairy Free Cookies and Cream Ice Cream.

    Deliciously sweet and decadent dairy free cookies and cream ice cream is sure to become a favorite recipe! Easy to make at home!

    Extra creamy dairy free vanilla ice cream is loaded with chocolate sandwich cookies for a delicious summer dessert! You won’t believe this cookies and cream ice cream is vegan. It’s the perfect dessert to make on a summer day.

    What was your favorite ice cream flavor when you were growing up? I had a few favorites…chocolate chip, moose tracks, chocolate chip cookie dough, and cookies and cream ice cream were all up there as favorite flavors.

    And if we were headed to Dairy Queen, well, it was a cookies and cream Blizzard that I ordered, pretty much every single time. Since a trip to Dairy Queen is not in our future due to food allergies, of course I needed to remake my childhood favorite in my ice cream maker here at home.

    This was such an easy flavor to recreate! I used coconut milk and maple syrup, and crumbled in some chocolate sandwich cookies, and that was all there was to it. But the result was SO good. The texture of this ice cream reminded me of a Blizzard. This is an awesome dessert to make this summer!

    Ingredient Notes

    • Coconut Cream – Coconut cream makes this ice cream super rich and delicious. If you can’t find canned coconut cream, you can use canned coconut milk – just be sure to drain off the excess water/liquid.
    • Maple Syrup – Maple syrup works well as a sweetener in this recipe. You could also use honey or agave syrup if you prefer.
    • Cookies – You will need to decide what type of chocolate sandwich/oreo cookies to get based on your dietary needs. Actual oreos are vegan, as are some other brands. I like the Kinnikinnick brand – those are gluten free. If you need to, you can make your own chocolate sandwich cookies.

    Special Equipment

    An ice cream maker is needed to make this dessert. I don’t know of a way to make this without this tool. I have the Cuisinart countertop ice cream maker and it does a nice job.

    Step by Step Instructions

    1. Place the coconut cream, maple syrup, vanilla, and salt in a bowl. Whisk it together, or blend it using a hand blender.

    1. Crumble up some chocolate sandwich cookies and set aside.

    1. Place the coconut cream mixture in your ice cream maker, and process according to the directions for your specific machine. Add the cookies 5 minutes before it is done processing.

    1. Serve immediately or store in the freezer.

    Storage

    Store leftover ice cream in an airtight container in the freezer. It should stay fresh for up to 3 months. Be aware that it will need to thaw out somewhat before you can scoop it out and eat it, since coconut milk gets very hard when frozen.

    Ingredients
      

    • 11 ounces coconut cream I like Native Forest Unsweetened Coconut Cream
    • ½ cup maple syrup
    • 1 Tablespoon vanilla extract
    • pinch of salt
    • 10 chocolate sandwich cookies broken

    Instructions
     

    • Place the coconut cream, maple syrup, vanilla extract, and salt in a bowl. Whisk it together, or use a hand blender to blend it.
    • Place the ice cream mixture in the bowl of your ice cream maker.
    • Process according to the manufacturer’s instructions.
    • About 5 minutes before it is done processing, add the crumbled oreo cookies.
    • Enjoy immediately, or store in the freezer. If you store in the freezer, you will need to allow time to thaw slightly before eating.

    Notes

    If you can’t find canned coconut cream, you can use full fat coconut milk. Just store the cans in the refrigerator so that the cream separates from the coconut water. Drain off the water before adding the cream to the rest of the ingredients.
    You can store leftover ice cream in the freezer. It will get very hard, though, so you need to make sure to allow time for it to thaw before scooping it.

      This looks amazing! Question – how much does this yield? My ice cream machine makes 1.5 pint size so trying to figure out how to adjust the recipe.

      This turned out AMAZING. I can’t believe it. I haven’t had cookies and cream icecream in years because of my allergies. I purchased the kinnickinnick brand cookies but the glutino ones I’m sure would be great too!

        You can use coconut cream, or you can use canned coconut milk that has been chilled, and then scoop the cream off the top, leaving the liquid behind.

      Have you made it with Almond Milk Unsweetened Vanilla instead of the Cocunut Milk ? Don’t want all those extra calories and fat if I can avoid it. Thanks

        I don’t think it will work with those low fat milks. You need the cream and fat to make creamy ice cream.

        Not that I know of. You could just put it straight into the freezer in a dish, but I think the texture would be a lot different.

          I’ve never tried it, but…What if you poured the coconut cream into an ice cube tray, froze the cubes, and then put the frozen cubes into a vitamix with the maple syrup and other ingredients (except for the crumbled cookies). Next, process the ingredients in the vitamix or similar high-speed blender, transfer the (hopefully) frozen concoction to a bowl, stir in the crumbled cookies, and perhaps you’d have a soft serve ice cream. You could eat it right away or freeze it. I wonder if it would work. I’m not going to test this, but maybe someone else would!

      Does this taste coconutty? My daughter doesn’t like coconut but needs dairy free. Can I use almond milk instead otherwise?

        It does have a slight coconut flavor, but it isn’t overpowering to me. I don’t know about using almond milk, but you could use cashew cream I think.
