Is there anything better than a steaming bowl of delicious, homemade chicken soup? It’s comforting, healing, and delicious.
This is my super quick and easy chicken soup recipe, for when you want a nice warming soup but don’t have all day to simmer and wait for it. This recipe has some shortcuts that you’ll really appreciate if you’re sick or in a hurry.
Using a rotisserie chicken is a real timesaver. You still have to debone and shred the chicken, but you don’t have to wait around for the chicken to cook. If you don’t want to use a rotisserie chicken, go ahead and use any cooked chicken that you have on hand.

Easy Chicken Soup
Super quick and easy recipe for chicken noodle soup. This is just right for those days when you aren't feeling well.
Ingredients
- 1/2 Tablespoon olive oil
- 3 celery stalks chopped
- 1 cup baby carrots
- 1 rotisserie chicken deboned and shredded
- 32 ounces chicken broth
- 6 ounces pasta cooked according to package directions
- 1/2 teaspoon garlic powder
- salt to taste
- pepper to taste
Instructions

Saute the celery and carrots in the olive oil over medium heat for about 7 minutes. Once softened, add the shredded chicken and chicken broth.

Bring to a boil, then reduce to a simmer and cook for about 15 minutes. Add the garlic powder, and salt and pepper to taste.

You can either add your pasta to the pot, or just put some in each bowl and spoon the soup over it. If you put all the pasta in and have a lot of soup left over, it does tend to soak up all the broth, so I usually keep them separate until serving.
Recipe Notes
You can use gluten free pasta or regular pasta, or you can even use cooked rice.Â
