    Easy Brown Sugar Glazed Carrots.

    Easy brown sugar glazed carrots are a perfect side dish for a holiday meal or Sunday dinner. A simple brown sugar glaze really brings out the natural sweetness of the carrots.

    Carrots are one of our favorite vegetables over here. We love roasted carrots and potatoes, carrot fries, and these easy glazed carrots.

    If your kiddos don’t love carrots, this recipe might be one to try. The sweet brown sugar glaze makes these extra delicious. This side dish works well for an everyday dinner, or even for a holiday meal.

    It’s nice to have a couple of dishes that are not complicated for a big holiday meal. Even though these are easy, the flavor is wonderful…I love a little bit of buttery, sweet glaze on carrots.

    Ingredient Notes

    • Sugar – You can use brown sugar or coconut sugar if that’s your preference.  You may want to add half of the sugar at a time and adjust the amount according to your taste. Maple syrup would also work well for this recipe.
    • Carrots – You can use frozen carrot coins if that’s what you have on hand. Either fresh or frozen carrots will work for this dish.
    • Vegan Buttery Spread – I like Earth Balance Soy Free Vegan Buttery Spread, but you can use any brand that works for your needs.
    • Parsley – Parsley works well as a garnish, but you could use a different fresh herb if you prefer. Basil or thyme would work well.

    Serving Suggestions

    Serve these carrots with:

    • Gluten Free Meatloaf
    • Roasted Chicken Legs
    • Vegan Shepherd’s Pie

    Storage

    Store leftover carrots in an airtight container in the refrigerator. They should stay fresh for about 4-5 days.

    Ingredients
     
     

    • 12 carrots or 16 ounces frozen carrot coins
    • 3 ½ Tablespoons vegan buttery spread or regular butter
    • 4 Tablespoons brown sugar or coconut sugar
    • ½ teaspoon sea salt
    • ¼ cup fresh parsley finely chopped
    Prevent your screen from going dark

    Instructions
     

    • Peel and slice the carrots.
    • Place the sliced carrots in a pot with about 2 cups of water. Simmer the carrots until they are tender – about 10 minutes.
    • Melt the buttery spread in a sauce pan over medium heat.
    • Add the sugar and salt. Stir until sugar is melted. Add the carrots and stir until the carrots are coated with the glaze. (You may want to add half the sugar and then adjust the amount according to your taste).
    • Serve with more salt if desired. Top with fresh herbs if you like.

    Notes

      I haven’t thought about Thanksgiving yet, but I probably should. Before we know it, it’s going to be Christmas! :) I love these glazed carrots, Kelly! I’ve never made this before, but my Grandma used to make a similar version and they were the best. Pinning!
