This gluten free cranberry chocolate chunk quick bread is a delicious bread to make or give as a gift. The best gifts are handmade, aren’t they?
I made this specific bread for two reasons. #1: it’s gluten free, vegan, and top 8 allergen free, and #2: it’s made with a boxed mix, so it’s stress free. Avoiding stress is important for my mental health, especially during busy months. :)
Now, I like to make plenty of things from scratch during the holiday season, but there are some days when you just need a quick and easy alternative. I’m not into running myself ragged during the holidays – I want to have time to enjoy myself! If you need a last minute dessert for guests or for a party, a boxed mix can be a good option. And you can fancy them up a bit with whatever your add-ins are.
Another reason a mix might be a good choice for you is if you are baking for someone who has different dietary needs than you do…if you aren’t experienced baking gluten free or dairy free, a mix from a trusted company could be just the thing to make your guests feel included and loved. :)

I love to bake with fresh cranberries – they are such a pretty shade of bright pink, and they are a little bit tart, which I feel pairs well with the chocolate chunks. Plus, you get a dose of antioxidants along with your dessert!

Gluten Free Cranberry Chocolate Chunk Quick Bread.
A quick and easy gluten free cranberry chocolate chunk quick bread made with a boxed mix.
Ingredients
- 1 box Enjoy Life Foods Muffin Mix
- 1 cup water plus 2 teaspoons
- 1/4 cup organic canola oil
- 1/2 teaspoon vanilla extract
- 3/4 cup fresh cranberries
- 3/4 cup dairy free chocolate chunks
Instructions

Preheat oven to 350 degrees. Line two 4x7 inch loaf pans with parchment paper.

Place the muffin mix, water, vanilla extract, and canola oil in a medium sized bowl. Stir well.

Add the fresh cranberries and chocolate chunks and stir again.

Spoon batter into prepared pans.

Bake at 350 for 23-27 minutes or until a toothpick inserted in the middle of the loaf comes out clean.

Let cool before slicing.
It’s easy to make these loaves, and if you are gifting them, simply wrapping them with parchment and baker’s twine makes a cute presentation.
