The warm weather is a perfect time to cool off with these watermelon kiwi popsicles. They’re full of fruit and a healthy dessert for summer! These are just a pretty to look at as they are delicious to eat.
Summer is almost here, and that means that it’s time for all the popsicle and ice cream recipes. It’s always a good idea to have a few homemade popsicle recipes to fall back on, just in case you can’t find your favorite allergy friendly brands at the store.
Plus, it’s just fun to make a batch of colorful lemon fruit popsicles or rich chocolate sunbutter ice cream pops.
One of my sons isn’t crazy about eating a lot of fruit, but I can get him to eat more fruit when I blend it up and freeze it into popsicles. If you have a picky eater, you know how tricky it can be to get them to eat a variety of things.
Can I use different fruit in this recipe?
Sure! I liked the look of the pink and green together – it kind of looks like a watermelon with a green rind, but you can use whatever you like. If you want to stick to the pink/red/green, try strawberries, raspberries, cherries, or honeydew melon.
The fun thing about making popsicles is that you can be really creative.
What kind of mold should I use?
This recipe made eight popsicles using a standard sized popsicle mold. You can find them on Amazon or at most home goods stores. If you have a smaller popsicle mold, just reduce the amount of fruit, or make it all and drink the leftovers – watermelon juice is the best!
If you don’t have a mold, you can try making these the old fashioned way, in paper cups with popsicle sticks or in an ice cube tray.
Tips for making these successfully:
- Let the watermelon layer freeze for a bit until firm, then add the kiwi and freeze again. Otherwise the fruits will get all mixed up and won’t look pretty.
- When you want to remove the popsicles from the mold, run warm water on the outside of the mold and gently pull on the sticks to remove.
- Taste your kiwis! I used the worst kiwis in the world for this recipe. Seriously, they ripened but never got sweet – they were like lemons! Ugh. If you have normal kiwi fruit, you can probably reduce the amount of sugar, or use another sweetener of your choice.
