    Fresh and colorful winter fruit salad - the perfect light dessert or side for a brunch!

    Winter fruit salad is fresh, colorful, and lovely! This light salad is sure to chase the winter blues away!

    Ugh, this weekend, just ugh.

    I don’t even know where to begin. Maybe with the drip-drip-drip that I woke up to on Saturday morning, (which was my birthday)?

    Or with the flooded kitchen? Or maybe the soggy living room carpet? All due to the broken hot water heater. Perhaps you want to hear about the giant mess it made in my house, and the way the water squished up between the tiles when I stepped on them.

    Topped off with the fact that Darryl was tied up at a performance all day long so I was handling the flood and the aftermath without him here.

    Yep, this birthday is going to go down in the books as a memorable one!

    So no picture of a pretty cake today, no fancy birthday dinner yet. But, it looks like I will get new carpet and new kitchen flooring for my birthday, so that’s not a bad thing! Especially when it will be paid for by the insurance company (after our deductible). :) So I guess the hot water heater breaking was a blessing in disguise? Yes, I’ll go with that.

    My kitchen has a giant industrial size humidifier in it today, and two huge, very loud fans. So it’s been simple food all the way for the past few days. This little winter fruit salad is delicious and easy to make, plus it uses fruits that are readily available and tasty in the winter.

    Winter Fruit Salad.

    Ingredients
      

    • 2 Golden Delicious Apples cored and diced
    • 2 kiwifruit peeled and diced
    • 1 cup mandarin oranges in juice drained
    • ¼ cup pomegranate seeds
    • 2 Tablespoons unsweetened coconut flakes
    Prevent your screen from going dark

    Instructions
     

    • Combine all ingredients in a large bowl.
    • Divide among four small bowls and serve.

    The bright colors and fresh flavors of this winter fruit salad will certainly brighten up a grey morning! If you don’t want to use the canned mandarin oranges, you can use regular oranges or clementines. My son loves the canned mandarins, so we buy them from time to time.

      Oh dear. Our basement flooded last year, thanks to a flood outside that just started pouring in. Drying out a place is never fun, but it’s amazing what those (noisy) industrial fans can do! I’m glad your insurance is covering the new floor! Yay for blessings in disguise!

      Happy birthday! It’s a bummer that you had to deal with that on your birthday, but, on the bright side, it could have been a lot worst, right? This fruit salad looks perfect for brightening up dreary winter days. Wishing you the happiest of birthdays (I think you should make it a weeklong celebration now to make up for that water heater breaking) and a fabulous year!

      Oh no!! That happened to me last summer; luckily I was still awake but trying to mop up hot water at 10pm on a Sunday was the last thing I wanted to be doing haha.
      Maybe you should just celebrate your birthday for the entire month of January instead of just the actual day ;)

      Oh no! We had our upstairs bathroom flood into our kitchen about a year ago and it was no fun. Those big fans and dehumidifiers are so loud – ugh is right! I hope everything is back to normal soon.
