  • Place the coconut cream, maple syrup, vanilla extract, and salt in a bowl. Whisk it together, or use a hand blender to blend it.
  • Place the ice cream mixture in the bowl of your ice cream maker.
  • Process according to the manufacturer's instructions.
  • About 5 minutes before it is done processing, add the crumbled oreo cookies.
  • Enjoy immediately, or store in the freezer. If you store in the freezer, you will need to allow time to thaw slightly before eating.

Notes

If you can't find canned coconut cream, you can use full fat coconut milk. Just store the cans in the refrigerator so that the cream separates from the coconut water. Drain off the water before adding the cream to the rest of the ingredients.
You can store leftover ice cream in the freezer. It will get very hard, though, so you need to make sure to allow time for it to thaw before scooping it.
