Gluten Free Cranberry Granola.

Buttery, sweet granola with dried cranberries, seeds, and chocolate chips is a delicious breakfast or snack. This simple recipe is great for everyday, and also perfect for gift giving.

  • Preheat the oven to 250 degrees F. Line a baking sheet with parchment paper.
  • Put the melted vegan buttery spread in a large bowl and add the vanilla extract and honey or maple syrup. Stir to combine.
  • Add the gluten free whole oats and stir well to coat.
  • Spread the granola on the baking sheet and bake at 250 degrees for about 45-55 minutes, until it is golden brown. Stir every 15 minutes or so.
  • Remove the granola from the oven and let it cool.
  • If you are going to give this as a gift, layer in a quart sized jar: granola, sunflower seeds, dried cranberries, and chocolate chips. (Alternately you can mix everything together and then put in the jar).
  • Place the granola in the jar and put the lid on. Top with parchment paper and baker's twine, then tie a gift tag on and write a festive message to your recipient.

Notes

This granola should stay fresh in the jar for at least 7-10 days.
If you are not gifting this, you can store in an airtight container or resealable bag.
