For the crust:

For the toppings:

  • marinara sauce
  • Daiya dairy mozzarella shreds
  • 1/2 cup red bell pepper diced
  • 1/2 cup yellow bell pepper diced
  • 1/3 cup red onion diced

  1. Preheat oven to 450 degrees.
  2. Put 3/4 cup warm water, yeast, and sugar in a large bowl and let sit for about 5 minutes to feed the yeast.
  3. Add the spelt flour, baking soda, salt, garlic powder, and olive oil and stir. If the dough seems too dry, add a little more water. Knead the dough a few times.
  4. Cover the bowl with plastic wrap and let it sit for about 20 minutes in a warm place so the dough can rise.
  5. When it has risen, put a little oil on your hands and take the dough and stretch it to fit on your pizza pan. I have also made a rectangular pizza on a cookie sheet before, either way works. Brush a little more olive oil over the top of the crust.
  6. Bake the crust alone for 5-6 minutes. Remove from oven, and top with marinara sauce, the Daiya cheese, and the vegetables.
  7. Bake at 450 degrees until the crust is golden brown on the edges and the cheese melts, about 15 minutes.
  8. Let cool for a few minutes before slicing.
