Instructions

  • Cream the sunbutter or wowbutter and the vegan buttery spread. Add the ground flax seed and mix.
  • Add the sifted confectioner’s sugar a little at a time and continue to mix until incorporated. If the dough seems too dry, add a little bit more vegan buttery spread.
  • Roll the sunbutter mixture into one inch balls and place on a tray lined with waxed paper. Refrigerate for about an hour.
  • After an hour, melt your chocolate chips in a double boiler, or in a bowl in the microwave. If you microwave them, start out with one minute, then stir. If they aren’t melted, microwave in 10 second increments, stirring in between until melted.
  • Stick each buckeye with a toothpick, and dip into the melted chocolate. Transfer back to the wax paper lined tray and refrigerate. The chocolate should be firm enough to eat in about an hour.

Notes

Serving size is one buckeye.
These can be stored in the refrigerator for up to one week.
If you are not dairy free, feel free to use regular butter and chocolate chips.
If you are not nut free, feel free to use the nut butter of your choice.
