Cut the tops of the heads of garlic, exposing the cloves.
Discard the tops. Place garlic heads on foil and drizzle generously with olive oil.
Close up the foil, making a little packet that keeps the garlic and oil sealed inside.
Place the foil packets directly on the oven rack. Roast at 375 degrees F for about 45-55 minutes until golden brown and very soft.
Once cool enough to handle, remove the garlic cloves. Spread on toast and enjoy!

You can store roasted garlic in the refrigerator for up to a week.You can store the roasted garlic paste in the freezer - just freeze it in teaspoon or tablespoonful sized portions in a freezer bag or container. It should stay fresh in the freezer for up to 3 months.
