Ingredients

  • 1 Tablespoon olive oil
  • 1 onion diced
  • 1 cup celery diced
  • 1 1/2 cups baby carrots chopped
  • 8 cups vegetable broth
  • 1 1/2 cups water
  • 2 cups red lentils picked over and rinsed
  • 4 cloves garlic crushed
  • 2 teaspoons cumin
  • 2 Tablespoons curry powder more or less to taste
  • 1 teaspoon sea salt
  • 1/2 teaspoon pepper
  • 1 cup non-dairy milk

Instructions

  1. Place the olive oil, onions, carrots, celery, and garlic in a large soup pot. Cook over medium heat for about 10 minutes to soften the vegetables.
  2. Add the red lentils, broth, water, curry powder, cumin, salt, and pepper, and bring to a boil.
  3. Reduce heat to medium low and cook until the lentils and vegetables are tender, about 20 minutes.
  4. Add the non-dairy milk and stir.

  5. Serve immediately.
