Place the non-dairy milk, potato starch, cinnamon, and salt in a shallow bowl and whisk together.
Place one tablespoon vegan buttery spread in a frying pan and melt over medium heat (5 or 6 on an electric stove).
Once the pan is hot and the buttery spread is sizzling, take a fork and dip a piece of bread into the batter, making sure the bread is coated on both sides. Place in the pan. Repeat, but don't crowd the pan.
Use your spatula to move the bread in the pan so it doesn't stick. After about 4-5 minutes, flip the bread. The French toast should be golden brown and crisp on both sides.
Repeat with remaining batter and bread. Top finished French toast with maple syrup, powdered sugar, or berries.
Notes
Serving size is one piece of French toast. You maybe able to make more or less slices depending on the size of your bread. There are a lot of brands of bread that are egg free. If you are looking for egg free, gluten free bread, you may want to check out Little Northern Bakehouse or Schar brands. This recipe should work with any type of bread, so you can use your favorite brand.Store leftover French toast in the refrigerator. It should stay fresh for up to 3 days. I recommend reheating individual slices in a toaster oven. Keep an eye on it so it doesn't burn.
