Roasted Carrot Fries.

These roasted carrot fries are a delicious side dish that everyone loves!

  • 2 pounds carrots
  • 2 Tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

  1. Preheat the oven to 450 degrees. Line a large cookie sheet or two small cookie sheets with parchment paper.

  2. Peel and slice the carrots into sticks about a half inch wide. This vegetable peeler does a great job.

  3. Place the carrot fries on the cookie sheet and drizzle with olive oil. Use your hands to toss the carrots to coat them with oil. Sprinkle with salt and pepper.

  4. Bake at 450 degrees for about 20 minutes, tossing once in the middle of the cooking time. We like ours a little bit browned.

  5. Let cool for a few minutes, then enjoy!

Recipe Notes

If some of the fries are getting too brown, remove them and allow the others to continue roasting.

Leftovers can be stored in the refrigerator for a 3 days, but these are best eaten immediately.
