Super Simple Roasted Red Potatoes

These easy roasted red potatoes are the perfect side dish for a busy weeknight or a cozy Sunday dinner. These are tender inside and crispy on the outside, and just delicious!

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.
  • Wash the red potatoes and dice them into small cubes.
  • Place the diced potatoes on the baking sheet. Drizzle with the olive oil and sprinkle with salt, pepper, and garlic powder. Use your hands to coat the potatoes with the oil.
  • Bake at 400 degrees F for about 40-45 minutes until the potatoes are tender and golden brown on the edges. Stir the potatoes every 15 minutes so that they brown evenly.
  • Season with more salt and pepper if desired before serving.

Notes

Leftovers will keep in the refrigerator for up to four days.
Season with any spices that you wish. You can try adding paprika, cumin, onion powder, or chili powder. Fresh garlic is also a nice addition.
