Chocolate Cherry Vegan Baked Oatmeal.

This chocolate cherry vegan baked oatmeal is a delicious way to start your morning! A delicious oat base, melty chocolate chips, and sweet cherries make this a scrumptious breakfast treat.

  • In a small bowl or cup, combine the golden ground flax seed meal and water. Set aside for a few minutes until it becomes like a gel.
  • In a large bowl, combine the melted vegan buttery spread, melted coconut oil, maple syrup, vanilla extract, brown sugar, and the flax seed gel. Stir well.
  • Add the certified gluten free oats, baking powder, and salt. Stir well again.
  • Add the pitted cherries and dairy free chocolate chips, and stir to combine.
  • Spoon the mixture into a casserole dish. Cover and refrigerate overnight if desired, or bake immediately.
  • When you are ready to bake this oatmeal, remove the dish from the refrigerator and preheat the oven to 350 degrees.
  • Uncover the casserole dish and bake at 350 degrees for about 40 minutes or until the top is golden brown and the chocolate chips are melty.

Notes

Store leftovers in the refrigerator for up to 5 days.
I have never tried freezing this, and am not sure that it would work out very well.
You can use fresh or frozen cherries - be sure to pit them!
If you don't have cherries, try strawberries, raspberries, or any berry you like.
I used both vegan buttery spread and coconut oil because I liked the flavor of both of them in this dish. You can use one or the other if you prefer. 
Feel free to add white chocolate chips, sunflower seeds, or coconut to this recipe.
