Place the frozen pineapple and berries in the food processor. Allow to sit for 5-10 minutes so it thans slightly.
Process on high speed until the fruit starts to break down.
Add the maple syrup, and scrape down the sides. Continue to blend until it is smooth and creamy.
Serve immediately. Top with granola, dried berries, or coconut flakes if desired.
Notes
Store leftovers in the freezer if desired. Allow to thaw for a bit before eating as it will be frozen solid.Leftover nice cream should stay fresh in the freezer for about one month.
