These four ingredient banana oatmeal cookies are perfect for those days when you need a cookie but don't have a lot of time to bake.

Ingredients
 
 

  • 1 ripe banana
  • cup gluten free oats
  • ¼ cup peanut butter You can use sunbutter or a different nut butter if desired.
  • cup dairy free chocolate chips

Instructions
 

  • Preheat the oven to 350 degrees F. Line a cookie sheet with parchment paper.
  • Place the banana in a bowl and mash well with a fork. Stir in the oats and peanut butter and mix together.
  • Add the chocolate chips and stir well.
  • Drop cookies onto prepared baking sheet. Use the back of a spoon to flatten each cookie slightly.
  • Bake at 350 degrees F for 12-14 minutes. The bottom of the cookies should be golden brown.
  • Let cookies cool for about 15 minutes before eating.
