Ingredients

  • 2 pounds frozen large shrimp shelled
  • 6-8 cloves of garlic
  • 1 Tablespoon olive oil
  • 4 Tablespoons vegan buttery spread or butter
  • salt and pepper to taste
  • 2 ½ cups cherry tomatoes halved
  • 8 ounces gluten free spaghetti cooked according to package directions

Instructions

  1. Put the garlic and the olive oil in a large skillet and cook on medium heat.
  2. Place the shrimp in a colander and rinse under cool running water to thaw.
  3. Add the shrimp and vegan buttery spread to the skillet. Cook for about 7 minutes until the shrimp is pink and opaque.
  4. Add salt and pepper to taste. Add the tomatoes and stir.
  5. Serve over hot pasta.
