Instructions
Wash the cherries and remove the pits from the cherries using a cherry pitter. Set the cherries on a paper towel lined plate to dry.
Place the chocolate chips in a small sauce pan and heat over medium low heat, stirring occasionally until smooth and melted. (You can also use a microwave to melt the chocolate if you prefer).
Line a cookie sheet with waxed paper.
Place one cherry at a time in the melted chocolate and use a spoon to make sure it gets fully coated. Set the chocolate covered cherries on the prepared cookie sheet. You can use the spoon to drizzle a little more chocolate overy each cherry for a decoration if desired.
Place the finished cherries in the refrigerator for 30-45 minutes or until the chocolate is set.
Store the finished candies in the refrigerator. They should keep for 2-3 days.
Notes
Nutrition facts are for 3 chocolate covered cherries. This recipe makes 10 servings.You can use any kind of chocolate you like. For dairy free chocolate chips, try Enjoy Life or PASCHA Chocolate. If you want to make these a little fancier, you can drizzle white chocolate on top, or top these with sprinkles while the chocolate is still melty.
