Peel and slice potatoes into wedges. Try to keep them all about the same size, so they cook evenly.
Place potatoes, olive oil, and seasonings in a large bowl. Toss to coat.
Place fries on two cookie sheets in a single layer.
Bake at 450 degrees F for about 45 minutes. Use a spatula to flip the fries every 15 minutes.
Drain on paper towels before serving.

**The original recipe called for ¾ Tablespoon of Jane's Krazy Mixed Up Salt Chunky Garlic Seasoning. This isn't a seasoning blend that I am comfortable with since my son has a sesame allergy now. I have updated the recipe with the spices that we use now.However, if you like Jane's Salt, and it's safe for you, I thought I'd mention that it was used in the original recipe.Store leftover fries in the refrigerator. They should stay fresh for about 2-3 days, but they really are best right out of the oven. If you do need to reheat them, I recommend using the toaster oven rather than the microwave so that they don't get too soggy.
