Place the gluten free oats, ground flax seed (if using), and unsweetened coconut in a glass jar and whisk together.
Add the maple syrup and non-dairy milk. Stir to combine. Place the lid on and place in the refrigerator overnight.
In the morning top with the dairy free chocolate chips, more coconut, berries, or seeds. Enjoy!
Notes
You can store overnight oats in the refrigerator for up to 5 days.Feel free to use any non-dairy milk that you like.If you can't eat coconut, you can leave it out.
