Creamy White Bean Dip with Cilantro and Garlic.

This white bean dip is super creamy and delicious, and it's bursting with flavor from garlic and cilantro. This is delicious with crunchy chips or fresh peppers and carrots.

Ingredients
 
 

  • 30 ounces white cannellini beans drained and rinsed
  • 3 Tablespoons extra virgin olive oil
  • 2 garlic cloves peeled and cut into pieces
  • ¾ cup cilantro leaves
  • 1 ½ teaspoons sea salt
  • ¾ teaspoon pepper
  • ½ teaspoon cumin
  • ½ teaspoon onion powder

Instructions
 

  • Place all ingredients in a food processor or high speed blender.
  • Blend together until mostly smooth (I like to see some bean pieces in there, so I stop blending before it is completely pureed).
  • Season with more salt and pepper if desired.
  • Serve with fresh vegetables, tortilla chips, or crackers.

Notes

You can use pinto beans or black beans if you don't have white beans available.
You can use parsley or fresh dill if you prefer.
Try adding some lemon if you want a refreshing flavor.
Store leftover bean dip in the refrigerator in an airtight container. It should stay fresh for about 4 days.
