Sweet and Spicy Gluten Free Chex Mix.

Ingredients

  • 4 cups corn Chex
  • 4 cups rice Chex
  • 1 1/2 cups cashews You can leave these out and add pumpkin seeds, a different nut, or more cereal.
  • 1 1/2 cups gluten free pretzels If pretzels don't work for your diet, leave these out and add more cereal.
  • 1/2 cup vegan buttery spread
  • 1 1/2 Tablespoons brown sugar
  • 1 Tablespoon paprika
  • 1 1/4 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 teaspoon chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/4 teaspoons cayenne pepper more if desired

Instructions

  1. Preheat the oven to 250 degrees.
  2. Pour the Chex, cashews, and pretzels in a very large bowl.
  3. Melt the vegan buttery spread in a microwave safe bowl. Add the spices to the melted spread, and stir.
  4. Pour the mixture over the Chex, nuts, and pretzels, and stir well to coat.
  5. Spread the Chex mix on a cookie sheet and bake at 250 degrees for about 45 minutes, stirring every 15 minutes.
  6. Let cool completely. Store in an airtight container.

Recipe Notes

If you can't have nuts, feel free to leave them out and substitute more Chex, pumpkin seeds, or even dairy free cheese crackers.

This Chex mix can be stored in an airtight container for up to a week.

If you can eat dairy, feel free to use regular butter.
