Cranberry Oat Bars.

Oats, cranberries, and flax seed combine to make these tasty bars.

  1. Preheat the oven to 325 degrees. Line an 8x8 pan with parchment paper.
  2. MIx the flour, oats, flax seeds, and salt in a bowl and set aside.
  3. In a small bowl, combine the coconut oil and maple syrup or honey, and microwave for 20 seconds. Stir.

  4. Add the wet mixture to the dry ingredients, and stir. Add the cranberries and stir again.
  5. Spoon the batter into the prepared pan and smooth it out with a spoon, pressing in firmly.
  6. Bake at 325 degrees for about 25 minutes. Allow to cool for about an hour. Using the parchment paper, remove the slab from the pan and transfer to a cutting surface. Cut into bars - I cut mine into 12 bars.
