Ingredients
  

  • 1 ½ cups frozen corn thawed, then drained
  • 15 ounces black beans drained and rinsed
  • 3 green onions white and green parts, chopped
  • 1 red bell pepper diced
  • cup sugar
  • ¼ cup apple cider vinegar
  • ¼ cup olive oil

Instructions
 

  • Mix the veggies in a bowl.
  • Add the vinegar, sugar, and olive oil, and stir.
  • Refrigerate for at least one hour to let the flavors blend.
  • Serve with tortilla chips.
