Ingredients

  • 1 1/2 cups frozen corn thawed, then drained
  • 15 ounces black beans drained and rinsed
  • 3 green onions white and green parts, chopped
  • 1 red bell pepper diced
  • 1/8 cup sugar
  • 1/4 cup apple cider vinegar
  • 1/4 cup olive oil

Instructions

  1. Mix the veggies in a bowl.
  2. Add the vinegar, sugar, and olive oil, and stir.
  3. Refrigerate for at least one hour to let the flavors blend.
  4. Serve with tortilla chips.
