  1. Preheat the oven to 350 degrees. Line two mini muffin tins with paper liners (for 18 mini muffins).
  2. Place the dry ingredients in a bowl and whisk with a fork.
  3. Add the non-dairy milk, unsweetened applesauce, and peanut butter and mix together.

  4. Add the mini chocolate chips and stir.
  5. Spoon batter into mini muffin cups (about a heaping tablespoon in each).
  6. Bake at 350 degrees for 15-18 minutes, until golden brown.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack to finish cooling.
