In a medium bowl, cream the first 3 ingredients together. Add dry ingredients and mix well.
Chill dough for 20-30 minutes. Using your hands, pack and shape the dough into small balls, place on a parchment-lined baking sheet, and press down with a flat-bottomed glass dipped in flour. (It may help if your hands are slightly damp when working with this crumbly dough.)
Bake at 350 degrees for 8-10 minutes, or until edges are golden.
Pile a rounded teaspoon of powdered sugar immediately on top of each cookie while it’s still on the pan.
Let cool completely before moving.
Makes 4 dozen cookies. These cookies freeze very well.
Store cookies in an airtight container to keep them fresh.
