A simple frittata with ham, spinach, and potatoes.

  • 8 eggs
  • 1 potato peeled and diced
  • ¼ cup onion chopped
  • ½ cup ham diced
  • ¾ cup baby spinach
  • ¼ cup water or non-dairy mik


  1. Preheat oven to 400 degrees. Whisk eggs and water or cream in bowl, season with salt and pepper.
  2. Add all other ingredients and mix. Pour into deep dish pie plate.
  3. Bake for 20 minutes or so, until a toothpick inserted in the middle comes out clean. Enjoy!
