Sweet 'N Spicy Roasted Almonds

Ingredients
  

  • 5 cups raw almonds
  • ¼ cup granulated sugar
  • ¼ cup light brown sugar
  • 2 ½ teaspoons coarse salt
  • 1 ½ teaspoon cayenne pepper
  • 2 Tablespoons maple syrup
  • 2 Tablespoons water
  • 2 teaspoons canola oil or olive oil

Instructions
 

  • Preheat oven to 350 degrees. Place almonds on a cookie sheet in a single layer and roast for about 10 minutes. Mix sugars, salt, and cayenne pepper in a large bowl.
  • Pour maple syrup, oil, and water into a large skillet and heat for a couple of minutes. Stir. Add toasted almonds and stir so they are all coated.
  • Transfer nuts to the large bowl with the sugar mixture using a slotted spoon,(don’t pour the extra liquid into the bowl); stir to coat. Cool in a single layer on a cookie sheet, then store in an airtight container.
