Preheat oven to 350 degrees. Place almonds on a cookie sheet in a single layer and roast for about 10 minutes. Mix sugars, salt, and cayenne pepper in a large bowl.
Pour maple syrup, oil, and water into a large skillet and heat for a couple of minutes. Stir. Add toasted almonds and stir so they are all coated.
Transfer nuts to the large bowl with the sugar mixture using a slotted spoon,(don’t pour the extra liquid into the bowl); stir to coat. Cool in a single layer on a cookie sheet, then store in an airtight container.
