Easy and delicious lentil and quinoa salad recipe - this salad is a great dish to bring to a picnic or potluck.

  • 1 cup lentils picked over and rinsed
  • 1 cup quinoa white or red
  • 2 cups cherry tomatoes
  • 1 cup green onions chopped
  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 1 cup feta cheese crumbled
  • sea salt
  • pepper


  1. In a medium saucepan, cover lentils with about an inch of water. Bring to a boil; reduce to a simmer and cover. Cook until lentils are tender - about 15-20 minutes. Drain and set aside to cool.
  2. In another sauce pan, bring 2 cups water and 1 cup quinoa to a boil. Reduce heat and cover, then cook on low for 15 minutes. Season with salt and pepper.
  3. Place all ingredients in a large serving bowl. Add more salt and pepper if desired. Serve sprinkled with feta.
