Ingredients
  

  • 1 Tablespoon olive oil
  • 1 onion diced
  • 1 cup celery diced
  • 1 ½ cups baby carrots chopped
  • 8 cups vegetable broth
  • 1 ½ cups water
  • 2 cups red lentils picked over and rinsed
  • 4 cloves garlic crushed
  • 2 teaspoons cumin
  • 2 Tablespoons curry powder more or less to taste
  • 1 teaspoon sea salt
  • ½ teaspoon pepper
  • 1 cup non-dairy milk

Instructions
 

  • Place the olive oil, onions, carrots, celery, and garlic in a large soup pot. Cook over medium heat for about 10 minutes to soften the vegetables.
  • Add the red lentils, broth, water, curry powder, cumin, salt, and pepper, and bring to a boil.
  • Reduce heat to medium low and cook until the lentils and vegetables are tender, about 20 minutes.
  • Add the non-dairy milk and stir.
  • Serve immediately.
