Place the vegan buttery spread in a frying pan, and melt over medium heat until it sizzles. Add the gluten free quesadilla.
Spread the mashed sweet potatoes on half of the quesadilla. Add the turkey slices, spinach, and dairy free cheese. Fold the quesadilla over.
Cook for a few minutes to brown, then carefully flip the quesadilla and cook for a few more minutes until the cheese is melted and the tortilla is golden brown.
Slice and half and serve! Repeat as needed for more quesadillas.
