Gluten Free Turkey Quesadillas with Spinach and Sweet Potatoes.

Ingredients
  

For each quesadilla:

  • 1 Tablespoon vegan buttery spread
  • 1 gluten free tortilla
  • 3 slices deli turkey
  • ¼ cup sweet potato mashed
  • cup fresh spinach
  • ¼ cup vegan cheese I used Daiya Jalapeno Havarti

Instructions
 

  • Place the vegan buttery spread in a frying pan, and melt over medium heat until it sizzles. Add the gluten free quesadilla.
  • Spread the mashed sweet potatoes on half of the quesadilla. Add the turkey slices, spinach, and dairy free cheese. Fold the quesadilla over.
  • Cook for a few minutes to brown, then carefully flip the quesadilla and cook for a few more minutes until the cheese is melted and the tortilla is golden brown. 
  • Slice and half and serve! Repeat as needed for more quesadillas.
