Garlic Roasted Green Beans with Lemon Mustard Sauce.

Tasty garlic roasted green beans are made even better with a delicious lemon mustard sauce.

Ingredients
 
 

  • 1 pound fresh green beans
  • 1 Tablespoon olive oil
  • 3 cloves garlic minced
  • salt to taste
  • pepper to taste

For the lemon mustard sauce:

  • 2 Tablespoons lemon juice
  • 1 Tablespoon olive oil
  • 2 teaspoons mustard

Instructions
 

  • Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
  • Remove the stem end of the beans and place them in a bowl of cold water to soak for a few minutes.
  • Drain the beans and put them on the baking sheet. Pat dry with paper towels.
  • Place the beans on the baking sheet along with the minced garlic and olive oil. Use your hands to toss the beans so that they are coated. Season with salt and pepper.
  • Bake at 400 degrees for about 25 minutes, stirring occasionally. They should be a bit brown around the edges.
  • Make the dressing by whisking together the olive oil, lemon juice, and mustard. Drizzle over the cooked beans. Enjoy!

Notes

Store leftover beans in the refrigerator. They can be reheated in the microwave or in the oven at 350 degrees until warmed through.
