– 1 ¾ cups gluten free flour blend or all purpose flour– 1 teaspoon baking soda– ½ teaspoon baking powder– ½ teaspoon salt– ⅞ cup sugar – ⅓ cup coconut oil or organic canola oil– 2 very ripe bananas– 1 teaspoon vanilla extract– 1 teaspoon vinegar– ⅜ cup water

Mash the bananas, then add the coconut oil and stir well. Add the sugar, vanilla, water, and vinegar, and mix until combined.
Add the gluten free flour, baking soda, baking powder, and salt and mix together.

Spoon batter into the prepared pan and bake at 350 degrees F.

Top will be golden brown and a toothpick inserted in the loaf should come out clean.
