Vegan Gluten Free Green Bean Casserole

Ingredients

For the onions: – oil for frying - sunflower oil or organic canola oil work well – 1 large sweet onion – non-dairy milk – about 1 cup gluten free flour  – 1 teaspoon salt For the sauce and green beans: – 3 Tablespoons vegan buttery spread – 3 cloves garlic minced – 8 large white mushroom – 1 cup vegetable broth  – 1 cup non-dairy milk  – 2 Tablespoons gluten free flour  – 1 teaspoon salt – ½ teaspoon pepper – 32 ounces frozen cut green beans

Thinly slice the onions and soak them in non-dairy milk. Slicing them thin will allow them to cook evenly.

Pour the gluten free flour blend into a shallow bowl so that you can dip the onions easily.

Fry the onions in about an inch of oil. You need to heat the oil to 375 degrees F.

Once the onions are crisp and golden brown, carefully remove them and set them on paper towel lined plates to drain.

Cook minced garlic and finely chopped mushrooms in vegan buttery spread for about 5 minutes.

Add the broth, non-dairy milk, salt, pepper, and GF flour to the mushrooms. Cook until the sauce thickens.

Add the frozen green beans, and cook over medium high heat for about 7-8 minutes.

Once the green beans are cooked through, pour the mixture into a casserole dish and top with the fried onions.

Bake at 375 degrees F for about 15 minutes. Watch the casserole, you don't want the onions to get too brown!
