EASY VEGAN SNOWBALL COOKIES
My family's favorite Christmas cookies!
These melt in your mouth!
– ¾ cup vegan buttery spread – 2 teaspoons vanilla – 2 Tablespoons unsweetened applesauce – 4 Tablespoons sugar – ¼ teaspoon salt – 2 cups gluten free flour or all-purpose flour – ½ cup dairy free mini chocolate chips – 1 cup powdered sugar
Put the vegan buttery spread, applesauce, sugar, and salt in a mixing bowl and beat on medium speed until light and fluffy. It's best to use a mixer for this recipe!
Stop the mixer, and add the flour a cup at a time, mixing on medium speed until it is all incorporated. The dough will be very thick.
Stir in the dairy free chocolate chips by hand.
Roll the dough into one inch balls and put them on a baking sheet. You can fit 12 cookies on a cookie sheet.
Bake at 325 degrees F for 18-21 minutes on a parchment paper lined cookie sheet.
While the cookies are warm, roll them in the powdered sugar. You will probably want to roll them twice to get a nice white coating.
These simply melt in your mouth! They are totally irresistible!
