Classic Vegan Macaroni Salad for a Party

This isn't a boring pasta salad - it's loaded with fresh veggies and a super tasty dressing!

– 12 ounces macaroni  – 1 red pepper, chopped – 1 small onion, chopped – 1 cup celery, chopped – 1 ½ cups frozen peas – 2 carrots, grated – 1 cup vegan mayonnaise  – 2 Tablespoons vinegar – 2 Tablespoons sugar – ¼ cup dill pickle relish – 1 ½ teaspoons salt – ⅓ teaspoon pepper – ½ teaspoon onion powder

If you're gluten free, you can use GF pasta in this recipe! Any shape you like will work.

Step 1

Cook the macaroni according to package directions. Then drain and rinse with cold water to cool down.

Step 2

While the pasta is cooking you can chop all the vegetables. Set aside.

Step 3

Mix up the dressing. Put the vegan mayo, apple cider vinegar, relish, sugar,  salt, pepper, and onion powder in a small bowl or jar. Stir well.

Step 4

Put the cooked macaroni, chopped veggies, and the salad dressing into a large bowl. Gently stir together.

Tip:

If you are going to make this ahead of time, keep the dressing separate and add it to the other ingredients right before serving.
