Toffee - It's a holiday classic! Whenever I make this treat I can't believe it's basically just sugar and vegan buttery spread.

Ingredients

– 1 cup Earth Balance soy free vegan buttery spread – 1 cup organic cane sugar – 3 Tablespoons water* – 1 Tablespoon organic corn syrup – ¼ teaspoon salt – 8 ounces dairy free chocolate chips

If you want to top this with nuts or sprinkles, feel free to do so! A few large flakes of sea salt would also be delicious.

Step 1

Place the vegan buttery spread, sugar, corn syrup, water, and salt in a heavy bottomed pan.

Cook over medium high heat, and once the toffee starts to boil, clip a candy thermometer to the edge of the pan.

Two things are important when making toffee: you must watch the candy thermometer, and you must keep stirring!

Once the toffee reaches 290 degrees, pour it onto a foil lined baking sheet.

Let the toffee cool for a couple minutes, then sprinkle dairy free chocolate chips on top.

Step 6

Once the chocolate chips are melty, spread them out with a knife or spatula. Put the pan in the fridge to chill.

Step 7

When the toffee is cool, it's time to break it into pieces. Break it into a couple large chunks, then place in a plastic bag and break it into small pieces.
