Strawberry Oatmeal Cookie Dough Bites.

Everyone loves a no-bake treat, and this one has it all! These cookie dough bites are sweet and delicious with a wonderfully fresh berry taste.

  • Place the certified gluten free oats and ¾ cup freeze dried strawberries in a food processor, and process on high speed until the oats are ground into flour.
  • Add the ground flax seed meal, vegan buttery spread, maple syrup, sugar, and vanilla extract into food processor and process until well blended.
  • Use your hands to roll the cookie dough into one inch balls and place onto a waxed paper lined cookie sheet.
  • Place the cookie dough bites into the refrigerator or freezer to chill for about one hour.
  • If you'd like to add more strawberry flavor, process another ⅓ cup freeze dried strawberries in a blender or mini food processor. This is optional, but it does add more color and flavor.

Notes

You can try making these with shredded, coconut, coconut flour, or almond flour if that works for you.
You can leave the flax seed meal out if you like.
