Ingredients

  • 22 fluid ounces of full fat coconut milk 2 3/4 cups
  • ½ cup maple syrup
  • 1/2 cup plus 1 Tablespoon pure pumpkin puree
  • 1 Tablespoon vanilla extract
  • 1 1/2 teaspoons cinnamon
  • 3/4 teaspoons ground ginger
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon salt
  • pinch of cloves
  • Enjoy Life Baking Chip Snack Packs for topping

Instructions

  1. Place the full fat coconut milk, maple syrup, pumpkin puree, spices, vanilla extract, and salt in your ice cream maker.
  2. Process according to the manufacturer's instructions.
  3. Enjoy immediately, or store in the freezer until ready to serve. If you store in the freezer, you will need to allow time to thaw slightly before eating.
  4. Top with Enjoy Life Baking Chips before serving if desired.
