  • 1 cup quinoa cooked according to package directions
  • 15 ounces black beans drained and rinsed
  • 1 cup corn kernels frozen or canned
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup green onions chopped
  • 1 garlic clove crushed
  • 2 Tablespoons fresh lemon juice or lime juice
  • 3 Tablespoons extra virgin olive oil
  • 1 teaspoon sea salt
  • 1/3 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/8 teaspoon cayenne pepper


  1. Prepare quinoa according to package directions, then let cool.
  2. In a large bowl, whisk together the lemon or lime juice, olive oil, garlic, and spices.
  3. Add the cooled quinoa, onions, black beans, corn, and cilantro. Mix together to combine.
  4. Serve immediately or refrigerate to until ready to serve.
