Simple Garlic Mushroom Quinoa.

This simple side dish is full of flavor! Garlic mushroom quinoa goes well with your favorite meat or vegetable main dish.

Ingredients
 
 

  • 1 cup quinoa I used a blend of red and white quinoa
  • 1 Tablespoons olive oil
  • 1 sweet onion diced
  • 5 cloves garlic minced
  • 16 ounces white button mushrooms sliced
  • 3 Tablespoons vegan buttery spread
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • teaspoon pepper
  • fresh parsley optional

Instructions
 

  • Rinse the quinoa and place in a pot along with 2 cups water. Bring to a boil, then reduce heat to low and cover the pan. cook for 15-20 minutes until quinoa is soft and fluffy.
  • While the quinoa cooks, put the olive oil, onion, and garlic in a large skillet and cook over medium heat for about 10 minutes. The onion should start to brown slightly.
  • Add the mushrooms and cook for about 15 minutes until the mushrooms are browned and everything is somewhat caramelized.
  • Stir in the garlic powder, salt, pepper, and cooked quinoa. Add the vegan buttery spread and stir again.
  • Serve immediately. Top with fresh parsley or cilantro if desired.

Notes

Leftovers can be stored in the refrigerator for 4-5 days.
