“This is the most delicious, easiest meal I’ve ever made. My family was raving and keep begging for it. And I’m happy to oblige, because it takes just a few inexpensive ingredients being dumped into a pot and I’m on with my day! I’m going to make it again tonight and get double ingredients for next week!” – Mel

When my second son was born, I was thrust into the world of food intolerances. As a breastfeeding mother battling my son’s reflux, I was confused and discouraged as I removed food after food from my diet in an effort to improve his symptoms. Once I became comfortable with those intolerances, my son was diagnosed with life threatening allergies to tree nuts, peanuts, and sesame seeds.
I refused to give up the joy of cooking delicious meals for my family. Although my ingredient list was now limited, I knew that I could create allergy friendly recipes that my family and friends would love.
I spent hours reworking our favorite recipes until I had allergy safe versions that were just as good, or better, than their original versions.
I love spending time in the kitchen now. My feelings of being lost and overwhelmed have been replaced with joy and confidence.
